So you have mastered cooking with your pizza stone in the house oven, but what about the BBQ grill? Lots of people are completely unaware of the ease with which you can cook a terrific pizza on the grill using your pizza stone. Just like inside, the pizza stone on the grill helps to hold the temperature constant and distribute heat evenly, resulting in a perfectly crispy crust, with no undercooked or overcooked spots. This is great for warm summer evenings when it’s too hot to cook in the house, or at a party where you can set up a pizza station and let everyone make their own mini pizza.
To get started make sure you preheat the BBQ up to about 500 degrees. If you are using charcoal or wood, make sure to spread the fuel evenly so that the pizza stone will cook the dough evenly. Go ahead and preheat your pizza stone while your grill is warming up. This is where the pizza stones with the wire handles comes in very handy. You can use a round or a square pizza stone, based on what shape your grill is. Many people find that having an inside pizza stone and then an additional pizza stone for the BBQ grill is the way to go! Consider using some mesquite or hickory wood chips to add a real smoked flavor to your meal.
While your pizza stone and BBQ grill are warming up is a great time to go ahead and precook any raw meat you might be using. Once you have your dough rolled out and all your favorite ingredients are piled on, you are ready to BBQ your pizza. If you have a pizza peel, you can slide the pizza right onto the stone without removing the stone from the BBQ. Otherwise, just lift the pizza stone out and sit it on an appropriate surface. Use a small amount of corn meal to help the crust not stick to the pizza stone. Place the pizza stone and pizza back into the BBQ and wait 4 to 5 minutes. When the crust is golden brown and the cheese is just starting to bubble, your first BBQ pizza stone meal is ready!
